Almond Cookie Cheesecake

2  cups Twin Dragon Almond Cookies, pulverized (1 box)
3  Tbsp. Butter, melted
  FILLING - All ingredients should be at room temperature.
1 1/2  lbs. Cream Cheese
1 1/3  cup Sugar
5   Eggs
16  oz, Sour Cream
1/4  cup Flour
2  tsp. Vanilla Extract, pure
2  tsp. Lemon Juice, fresh


2) Preheat oven to 325 degrees F.
3) Mix Almond Cookie crumbs with butter. Press into 9” buttered spring form pan.
4) FILLING: All ingredients should be at room temperature.
5) Beat cream cheese until light and fluffy. Keep mixer on low speed.
6) Add sugar a little at a time beating till creamy.
7) Add one egg at a time. Beat until smooth after each egg.
8) Add flour, vanilla and lemon juice. Mix well.
9) Add sour cream. Beat well.
10) Pour mix into spring form pan.
11) Place pan on middle rack in oven. Bake 1 hour and 15 minutes.
12) Turn off heat. Prop open door slightly and leave in oven for 1 hour.
13) Remove from oven. Let cool to room temperature.
14) Refrigerate for 24 hours before serving.
